Celebrate Independence Day with this delightful 4th of July Fruit Pizza. A sugar cookie crust topped with a creamy cheesecake layer and fresh berries makes for a festive and delicious dessert.

For the Sugar Cookie Crust:

  • 1 1/2 cups (188 grams) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113 grams) unsalted butter, softened
  • 3/4 cup (150 grams) granulated sugar
  • 2 teaspoons lemon zest
  • 1 1/2 teaspoons lemon extract
  • 1 large egg (50 grams, out of shell)

For the Cheesecake Topping:

  • 8 oz (225 grams) cream cheese, room temperature
  • 1 1/3 cups (160 grams) powdered sugar
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 1/3 cup (80 ml) heavy cream, cold

For Topping:

  • 1 pound (453 grams) strawberries
  • 6 oz (170 grams) blueberries

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add lemon zest, lemon extract, and egg; then combine with dry ingredients.

  3. Spread dough on a parchment-lined baking sheet and bake for 15 minutes until lightly golden. Cool completely.
  4. Beat cream cheese until smooth.
  5. Gradually add powdered sugar; mix in vanilla and whip cream until stiff peaks form. Fold whipped cream into the mixture until smooth.

  6. Spread cheesecake topping over the cooled crust and arrange strawberries and blueberries on top.
