Instructions

  1. Step 1: Place the parsley in the bowl of a food processor and pulse until finely chopped, then remove and set aside.
  2. Step 2: In the same food processor bowl, pulse the quartered onion until finely chopped. Drain the onions slightly to remove excess moisture.
  3. Step 3: Return the chopped parsley to the food processor with the onions. Add the ground beef and all the spices. Pulse once or twice until the mixture is well combined and forms a pasty texture.
  4. Step 4: Transfer the mixture to a large bowl and shape into oblong patties about 1 inch thick. This recipe makes about 12 patties. You can form them around wooden skewers or shape them without.
  5. Step 5: Grease the grates of a gas grill or indoor grill pan and preheat to medium-high heat. When hot, grill the kafta for 4-5 minutes per side, adjusting the time based on your preferred doneness.
