  3. Step 3: Add the tomato paste, olive oil, lemon juice, kosher salt, black pepper, Aleppo pepper, and sumac to the vegetable mixture. Stir well until all ingredients are evenly incorporated.
  4. Step 4: Refrigerate the ezme for at least 30 minutes to let flavors meld. Serve chilled as a mezze, salad, or sauce alongside your favorite dishes.
