Crispy and flavorful Air Fryer Zucchini recipe that is easy to make and perfect as a side dish or snack. The zucchini is coated in a crunchy Parmesan breadcrumb mixture and air fried to golden perfection.

Zucchini:

  • 3 small/medium zucchini (about 1 1/4 pounds)

Coating:

  • 1 1/2 tablespoons extra-virgin olive oil
  • 2 tablespoons panko breadcrumbs
  • 2 tablespoons finely grated Parmesan cheese (for a vegan version, use nutritional yeast)
  • 1 tablespoon white whole wheat flour or all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground black pepper

Instructions

  1. Trim: Trim off the ends of the zucchini and cut into quarters length-wise. Cut crosswise into 3/4-inch thick half-moons. Place in a mixing bowl.
  2. Toss: Drizzle zucchini with olive oil and toss to coat.
  3. Sprinkle: In a separate bowl, combine panko, Parmesan, flour, salt, onion powder, and pepper. Sprinkle mixture over zucchini and toss to coat evenly.
  4. Preheat: Preheat air fryer to 400°F.
  5. Cook: Place half of the zucchini in the air fryer basket. Air fry for 7-9 minutes, shaking occasionally, until golden and tender. Repeat with remaining zucchini.

Notes

  • For extra flavor, add a pinch of garlic powder or Italian seasoning to the breadcrumb mixture.
  • Make sure not to overcrowd the air fryer basket to ensure even cooking.
