Main Ingredients
- 4 Mexican mazapanes (1 oz / 28 g each)
- 4 cups milk
- 3 tablespoons corn starch (Maizena)
- 1 teaspoon ground cinnamon
- 3 tablespoons sugar (adjust to taste)
- Prepare the Mazapan Mixture: Add 4 Mexican mazapanes, 3 tablespoons corn starch, 1 teaspoon ground cinnamon, and 3 tablespoons sugar to a blender. Pour in 2 cups of milk and blend on high speed for 15 to 30 seconds. The longer you blend, the smoother the drink will be.
- Heat Remaining Milk: Pour the remaining 2 cups of milk into a medium-sized pot and warm it over medium heat until it is hot but not boiling.
- Combine and Cook: Pour the blended mazapan mixture into the pot with the warm milk. Cook over medium-low heat for about 15 minutes, stirring constantly to prevent lumps, until the mixture thickens enough to coat the back of a spoon.
- Serve: Pour the thickened atole into cups and enjoy immediately while warm. Alternatively, allow it to cool slightly and serve later.
