Main Ingredients:
- 1 cup long grain white rice
- 1 cup water
- 1 teaspoon salt
Pudding Mixture:
- 3 3/4 cups milk
- 1/4 cup Bailey’s Irish Cream
- 12 ounces evaporated milk
- 1 large egg
- 1/2 cup granulated sugar
- 1 cup raisins
- 1 teaspoon ground cinnamon (plus more for garnish)
- Cook the Rice: In a medium saucepan, combine rice, water, and salt. Bring to a boil, then cook until most of the liquid dissolves, about 5 minutes.
- Add Milk and Irish Cream: Stir in milk and Bailey’s Irish Cream. Cook until most of the liquid dissolves, approximately 30 minutes.
- Final Steps: Mix in evaporated milk, egg, and sugar. Cook for 2 minutes, then remove from heat. Stir in raisins and cinnamon.
- Chill and Serve: Transfer the pudding to a serving bowl or individual cups. Refrigerate for at least 2 hours until set. Before serving, sprinkle with cinnamon and/or drizzle with more Bailey’s Irish Cream.
