  • 1 cup long grain white rice
  • 1 cup water
  • 1 teaspoon salt

Pudding Mixture:

  • 3 3/4 cups milk
  • 1/4 cup Bailey’s Irish Cream
  • 12 ounces evaporated milk
  • 1 large egg
  • 1/2 cup granulated sugar
  • 1 cup raisins
  • 1 teaspoon ground cinnamon (plus more for garnish)

Instructions

  1. Cook the Rice: In a medium saucepan, combine rice, water, and salt. Bring to a boil, then cook until most of the liquid dissolves, about 5 minutes.
  2. Add Milk and Irish Cream: Stir in milk and Bailey’s Irish Cream. Cook until most of the liquid dissolves, approximately 30 minutes.
  3. Final Steps: Mix in evaporated milk, egg, and sugar. Cook for 2 minutes, then remove from heat. Stir in raisins and cinnamon.
  4. Chill and Serve: Transfer the pudding to a serving bowl or individual cups. Refrigerate for at least 2 hours until set. Before serving, sprinkle with cinnamon and/or drizzle with more Bailey’s Irish Cream.

Notes

  • You can adjust the sweetness by adding more or less sugar based on your preference.
