Instructions

  1. Preheat Oven: Preheat the oven to 180°C (350°F) using the fan setting to ensure even cooking.
  2. Soak Dates: Soak the Medjool dates in a bowl of boiling water for 5 minutes to soften them, making blending easier.
  3. Process Oats: In a food processor, pulse the rolled oats into a rough flour texture. Remove and set aside for later use.
  4. Prepare Dates: Drain the soaked dates and remove the pits carefully to avoid any hard bits.
  5. Make Sticky Paste: Add the pitted dates, banana, and coconut oil into the food processor and blend until it forms a sticky paste.
  6. Create Dough: Add the processed oats back into the food processor along with a pinch of ground cinnamon and blend again until a sticky dough forms.
  7. Shape Rusks – Method 1: Take small portions of the dough and roll them into circles, then elongate into cylinder shapes by hand. Place each on a parchment-lined baking tray and gently flatten slightly. Round the edges to form neat batons.
  8. Shape Rusks – Method 2: Alternatively, sandwich the dough between two sheets of parchment paper and roll out with a rolling pin until approximately ½ cm thick. Cut into long thin rectangles with a sharp knife.
  9. Bake Rusks: Place the shaped rusks on the middle oven shelf and bake for 10-12 minutes until the edges turn slightly golden. Remove promptly to avoid over-drying.
