Ingredients

Scale

Pasta

  • 8 ounces spaghetti (or linguine pasta)

Sauce

  • ¾ cup mayonnaise
  • ⅓ cup sweet chili sauce
  • 2 limes (juiced)
  • 2 tablespoons sriracha

Shrimp and Seasoning

  • 12 ounces medium shrimp (deveined and peeled)
  • 2 cloves garlic (finely minced)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon onion powder

Other

  • 1 tablespoon vegetable oil (or olive oil)
  • 1 tablespoon parsley (chopped)

Instructions

  1. Cook Pasta: Bring a large stock pot of water to a boil and salt generously. Cook the spaghetti or linguine pasta according to package instructions until al dente. Drain the pasta and set it aside.
  2. Prepare Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, lime juice, and sriracha until smooth and well combined. Set aside.
  3. Season Shrimp: In a large bowl, toss the peeled and deveined shrimp with finely minced garlic, paprika, salt, and onion powder until evenly coated.
  4. Cook Shrimp: Heat vegetable or olive oil in a large skillet over medium heat. Arrange shrimp in a single layer and cook for 2 to 3 minutes per side, or until shrimp are just opaque and cooked through.
  5. Combine with Sauce: Pour the prepared sauce into the skillet with the shrimp. Stir and cook for another 5 minutes, allowing the sauce to come to a simmer and thicken slightly.
  6. Mix Pasta and Serve: Add the drained pasta to the skillet and toss everything together until the pasta is fully coated with the sauce and shrimp. Garnish with freshly chopped parsley before serving.

Notes

  • For a healthier version, substitute mayonnaise with Greek yogurt or a light mayo.
  • You can use linguine or fettuccine as alternatives to spaghetti.
  • If you prefer less heat, reduce the amount of sriracha.
  • Ensure shrimp are not overcooked to keep them tender and juicy.
  • This dish is best served immediately for optimal flavor and texture.
