For the Potatoes:
- 5 small/medium potatoes, peeled and cubed
- olive oil, salt, pepper, garlic powder, and paprika
For the Chicken:
- 2 chicken breasts, cubed
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp paprika
- 1 tsp ranch seasoning
- 1 tsp onion powder
- 2 TBSP butter
- 1 TBSP minced garlic
- 1/2 cup BBQ sauce
- 1 cup shredded mozzarella cheese
- Prepare Potatoes: Peel, wash, and cut potatoes into cubes. Toss with olive oil, salt, pepper, garlic powder, and paprika. Cook in air fryer at 400°F for 20-25 minutes, shaking occasionally.
- Cook Chicken: Cube chicken breasts. Cook in a skillet with butter on medium-high heat. Season with salt, pepper, paprika, ranch seasoning, and onion powder. Add minced garlic and BBQ sauce.
- Combine: Add cooked potatoes to the skillet with the chicken. Stir together and top with shredded cheese.
- Finish: Broil in the oven briefly to melt the cheese. Alternatively, cover the skillet to melt the cheese. Finish with more BBQ sauce before serving.
