BBQ Chicken Tostadas Recipe

For BBQ Chicken:
- 1.5lb chicken breast
- 1.5 cups BBQ Sauce (additional to drizzle on top)
- 1/3 cup chicken broth
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- 1 tsp sea salt
- 1/2 tsp black pepper
For Tostadas:
- 3 corn tortillas
- 1/2 cup refried beans
- 1 cup shredded mozzarella cheese
- 3 tbsp cilantro
- 3 tbsp red onion, finely diced
- Avocado Oil spray
- Prepare BBQ chicken: Add chicken breast, chicken broth, BBQ sauce, and seasonings to the crockpot. Set for high for 4 hrs or low for 6 hrs. Shred with a fork once done.
- Preheat oven: Preheat oven to 400 degrees.
- Prepare tortillas: Lay tortillas on a baking sheet and spray lightly with avocado oil spray. Place in the oven for 10 minutes, flipping halfway through.
- Heat up refried beans: Heat up refried beans on stovetop or in the microwave.
- Assemble tostadas: Add refried beans, shredded chicken, and cheese to the tortillas. Place back in the oven for 3-4 minutes until cheese is melty.
- Top and serve: Top with cilantro, red onion, and a drizzle of BBQ sauce. Enjoy!
Notes
- Feel free to customize your tostadas with additional toppings like avocado, sour cream, or jalapenos.
- For a spicier kick, use a spicier BBQ sauce or add red pepper flakes to the chicken.
