A quick and easy Bean Sprout Stir Fry featuring fresh bean sprouts sautéed with garlic, green onions, and a savory soy-based sauce. This vibrant and crunchy side dish is perfect for complementing a variety of Asian-inspired meals, combining flavors of toasted sesame oil, light sweetness from brown sugar, and the subtle heat of white pepper.

Ingredients

Scale

Vegetables

  • 1 lb bean sprouts
  • 4 cloves garlic, finely chopped
  • 2 green onions, sliced

Oils and Sauces

  • 2 tablespoons peanut oil
  • 2 teaspoons soy sauce
  • 1/2 teaspoon dark soy sauce (optional)
  • 1 teaspoon toasted sesame oil

Seasonings

  • 1/2 teaspoon salt
  • 1 teaspoon brown sugar (or regular sugar)
  • 1/4 teaspoon white pepper

Instructions

  1. Prepare the Bean Sprouts: Clean the bean sprouts by removing any stringy roots and residual beans. Rinse them thoroughly with cold water, then squeeze out any excess moisture. Set aside to dry. If still wet before cooking, gently pat dry with paper towels to prevent sogginess.
  2. Make the Sauce: In a bowl, combine soy sauce, dark soy sauce (if using), brown sugar, salt, and white pepper. Mix well and set aside.
  3. Heat the Oil and Garlic: Warm the peanut oil in a wok or large skillet over medium-high heat until hot. Add the finely chopped garlic and fry until it begins to brown and releases its aroma.
  4. Add Green Onions: Toss in the sliced green onions and stir a few times to awaken their fragrance.
  5. Cook the Bean Sprouts: Add the bean sprouts and increase the heat to high. Toss and stir occasionally for about 1 minute, allowing them to slightly soften but remain crisp.
  6. Add the Sauce and Finish Cooking: Pour in the prepared sauce mixture. Continue to stir-fry the bean sprouts for another 2 to 3 minutes until cooked through but still crunchy. Taste and adjust seasoning by adding more salt if necessary.
  7. Serve Hot: Transfer the stir-fried bean sprouts to a serving plate. Drizzle with toasted sesame oil and serve immediately as a delicious side dish.

Notes

  • To ensure a crisp texture, avoid overcooking the bean sprouts.
  • If peanut oil is unavailable, vegetable or canola oil can be used as alternatives.
  • Dark soy sauce is optional but adds depth and color; you may omit or substitute with additional light soy sauce.
  • This dish pairs well with steamed rice and other stir-fried dishes to create a balanced meal.
  • For a gluten-free option, use tamari instead of soy sauce.
