Instructions

  1. Cook the noodles: Bring a pot of salted water to a boil and add the egg noodles. Cook according to package directions until al dente. Drain and set aside. Meanwhile, preheat the oven to 400 degrees F (200 degrees C).
  2. Heat the oil: While the noodles cook, heat 2 teaspoons of olive oil in a large pan over medium-high heat until shimmering.
  3. Brown the beef: Add 1 1/4 pounds of lean ground beef to the pan. Cook for 4-5 minutes, stirring and breaking up the meat with a spatula until evenly browned.
  4. Sauté onions and garlic: Add the finely chopped onion and minced garlic to the beef. Cook for an additional 5 minutes until the onion softens and beef is cooked through. Season with salt and pepper to your preference.
  5. Add tomato and seasoning: Stir in 16 ounces of canned tomato sauce, the drained 15-ounce can of diced tomatoes, and 2 teaspoons of Italian seasoning. Mix well to combine all the flavors.
  6. Toss noodles with beef mixture: Add the drained egg noodles to the pan and gently toss to coat them thoroughly with the beef and tomato mixture.
  7. Assemble the casserole: Spray a 9×13 inch baking dish with cooking spray. Pour the beef and noodle mixture into the dish and spread evenly. Sprinkle 2 cups of shredded cheddar cheese evenly over the top.
  8. Bake: Place the dish in the preheated oven and bake for 10-15 minutes, or until the cheddar cheese has melted and is bubbly.
