Ingredients

Scale

Cake

  • 2 eggs
  • 1 tsp almond extract
  • 1 Devil’s Food cake mix (approx. 15.25 oz)
  • 21 oz cherry pie filling

Frosting

  • ⅓ cup milk
  • 1 cup sugar
  • 5 tbsp butter
  • 1 cup semi-sweet chocolate chips

Topping

  • 1 ½ cups whipping cream (cold)
  • 3 tbsp powdered sugar
  • 1 chocolate bar (for shaving, approx. 1.5 oz)

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F. Spray a half sheet baking sheet (15″x10″x1″) with baking spray containing flour and set it aside.
  2. Prepare the Cake Batter: In a large bowl, whisk together the eggs and almond extract until combined. Add the Devil’s Food cake mix and the entire 21 oz can of cherry pie filling to the bowl. Whisk everything together until the mixture is smooth and well combined.
  3. Bake the Cake: Spread the cake batter evenly into the prepared baking sheet. Place it in the preheated oven and bake for 23 to 27 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  4. Make the Frosting: While the cake bakes, combine the milk, sugar, and butter in a small saucepan over medium-high heat, stirring frequently until the butter is melted and the mixture is well combined. Bring it to a boil and let it boil for exactly 1 minute, then remove from heat. Stir in the semi-sweet chocolate chips until the frosting is smooth and glossy.
  5. Frost the Cake: Pour the hot frosting evenly over the warm cake and spread it out to cover the edges. Allow the cake with frosting to cool completely before proceeding, or enjoy warm with ice cream if preferred.
  6. Prepare the Whipped Cream Topping: Using a hand mixer or stand mixer, beat the cold whipping cream in a medium bowl until soft peaks begin to form. Add the powdered sugar and continue beating until stiff peaks form, being careful not to overbeat.
  7. Decorate and Garnish: Dollop or spread the whipped cream evenly over the cooled cake, then add extra cherry pie filling on top as desired. Using a vegetable peeler, shave pieces off the chocolate bar and sprinkle the shavings over the whipped cream for an elegant finish.
  8. Serve: Slice the cake into squares and serve. This cake pairs wonderfully with vanilla ice cream if serving warm.

Notes

  • Use a baking spray with flour to prevent sticking and ensure easy cake removal.
  • Make sure the whipping cream is very cold for best whipping results.
  • The almond extract enhances the cherry flavor but can be omitted if allergies are a concern.
  • For a richer chocolate taste, substitute semi-sweet chocolate chips for bittersweet if preferred.
  • Store leftovers covered in the refrigerator for up to 3 days.
