  • 1 1/2 teaspoons Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 tablespoon honey
  • 2 tablespoons fresh lemon juice
  • 4 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Grate the peeled carrots using a standard box grater and place them in a large mixing bowl. Add the finely sliced green onions, dried cranberries, and chopped parsley if using, mixing them gently to combine.
  2. Make the dressing: In a mason jar or a small bowl with a tight-fitting lid, combine the Dijon mustard, mayonnaise, honey, fresh lemon juice, extra virgin olive oil, salt, and black pepper. Seal the jar and shake vigorously until the dressing is emulsified and smooth.
  3. Toss and serve: Pour the prepared mustard dressing over the grated carrot mixture. Toss thoroughly to ensure all the ingredients are evenly coated with the dressing. Serve immediately for fresh crispness, or chill in the refrigerator until ready to enjoy.

Notes

  • You can substitute mayonnaise with Greek yogurt for a lighter dressing.
