Ground Beef Mixture:
- 1 pound ground beef
- 1 onion, chopped
- 1 cup chopped dill pickles or sweet pickles
- 1 cup shredded Cheddar cheese
- 1 tablespoon prepared yellow mustard, or to taste
Assembly:
- 1 (16 ounce) package egg roll wrappers
- 1 cup vegetable oil for frying
- Cook Ground Beef Mixture: In a skillet over medium heat, cook ground beef and onion until browned. Drain and transfer to a bowl. Add pickles, cheese, and mustard; mix well.
- Assemble: Place a wrapper on a clean surface, add filling, and roll tightly into a cylinder. Seal the edge with water. Repeat for remaining wrappers.
- Fry: Heat oil in a saucepan to 365°F (185°C). Fry egg rolls in batches until golden brown, about 4-5 minutes per batch. Drain on paper towels.
