This Cheeseburger Pasta Salad combines all the flavors of a classic cheeseburger in a delightful pasta salad. Perfect for picnics, potlucks, or a simple weeknight dinner, this dish is sure to be a hit with both kids and adults.

Pasta:

  • 8 oz fusilli bucati corti pasta

Ground Beef:

  • 1/2 tbsp olive oil
  • 1 lb ground beef
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 3/4 cup cheddar, shredded

Salad Mix-Ins:

  • 3/4 cup pickles, finely diced
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, shredded
  • 1/4 cup red onion, finely diced

Burger Sauce:

  • 1/4 cup mayonnaise
  • 1/4 cup creamy French dressing
  • 3 tbsp reserved pasta water
  • 1 tbsp sweet pickle relish
  • 1/4 tsp granulated sugar
  • 1/2 tsp garlic powder
  • 1/4 tsp turmeric

Instructions

  1. Cook the pasta: Prepare the pasta according to package directions. Reserve ¼ cup of the starchy pasta water, drain, transfer the pasta to a sheet pan to cool, and toss with 2 tbsps of olive oil.
  2. Cook the ground beef: Heat the oil in a skillet over medium-high heat, add the ground beef, brown for 4-5 minutes on each side, break the meat apart, and continue cooking until no longer pink. Add seasonings and cheese, cook until melted, then let cool.
  3. Prepare the pasta salad: In a large mixing bowl, combine the pasta, cooked ground beef, burger sauce, pickles, tomatoes, lettuce, and red onion. Mix well.

Notes

  • For added flavor, consider topping with crispy bacon bits.
  • This salad can be made ahead and refrigerated until ready to serve.
