For the Ground Beef:
- 1 pound Ground Beef
- ½ Teaspoon Salt
- ¼ Teaspoon Pepper
- ¼ cup Dill Pickles (chopped)
For the Quesadilla:
- 4 Burrito Size Tortillas (10 inch tortillas)
- 2 cups Cheddar Cheese (shredded)
For the Special Sauce:
- ½ cup Mayonnaise
- 2 Tablespoons Ketchup
- 2 Tablespoons Minced Pickles
- 1 Tablespoon Minced Onion
- 2 Teaspoons White Vinegar
- Brown the ground beef: In a large skillet over medium-high heat, cook the ground beef until no longer pink. Season with salt and pepper, then drain off excess grease.
- Prepare special sauce: In a mixing bowl, combine mayonnaise, ketchup, minced pickles, minced onion, and white vinegar.
- Heat skillet: Preheat a separate skillet or griddle over medium-high heat.
- Assemble quesadillas: Place a tortilla in the skillet, spread special sauce on half, top with ground beef, pickles, and cheddar cheese. Fold in half.
- Cook quesadilla: Cook until golden brown on one side, then flip and cook until cheese is melted and both sides are golden brown.
- Serve: Repeat process to make remaining quesadillas. Slice each into 4 pieces and serve warm.
