Deliciously rich cheesecake brownies featuring a moist brownie base swirled with creamy, tangy cheesecake topping. This easy-to-make dessert combines the best of fudgy brownies with a smooth cheesecake layer for an indulgent treat perfect for any occasion.

Ingredients

Scale

Brownie Base

  • 1 box brownie mix (typically includes vegetable oil, water, and eggs as per package instructions)

Cheesecake Swirl

  • 8 ounces cream cheese, softened
  • ⅓ cup sugar
  • 2 teaspoons vanilla extract
  • 1 egg

Instructions

  1. Preheat and Prepare: Preheat your oven to 325°F (163°C). Line an 8×8 inch square baking dish with parchment paper, leaving an overhang on the sides for easy removal, and set aside.
  2. Prepare Brownie Batter: Mix the brownie batter according to the package instructions, usually combining the mix with vegetable oil, water, and eggs. Reserve ½ cup of this brownie batter separately, and pour the remaining batter evenly into the prepared baking dish.
  3. Make Cheesecake Mix: In a medium bowl, beat together the softened cream cheese, sugar, and vanilla extract until the mixture is smooth and creamy with no lumps.
  4. Add Egg to Cheesecake Mixture: Gently beat in one egg until fully incorporated, creating the cheesecake swirl batter.
  5. Layer Cheesecake on Brownies: Drop spoonfuls of the cream cheese mixture over the brownie batter in the baking dish in scattered scoops to create a marbled effect.
  6. Thin Reserved Brownie Batter: Stir a tablespoon of water into the reserved ½ cup brownie batter to loosen it slightly. Drop spoonfuls of this thinned batter over and between the cheesecake scoops on top of the brownie mixture.
  7. Swirl Together: Using a knife or spatula, gently swirl the cheesecake mixture and the brownie batter together to create a marbled pattern without fully mixing them.
  8. Bake: Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs, indicating the brownies are baked through but still fudgy.
  9. Cool and Serve: Allow the brownies to cool completely in the baking dish on a wire rack before lifting out using the parchment paper overhang. Cut into squares and serve.

Notes

  • Letting the brownies cool completely helps the cheesecake layer set and makes cutting easier.
  • You can use any favorite boxed brownie mix for convenience.
  • For an extra chocolatey touch, add chocolate chips to the brownie batter before baking.
  • Store brownies in an airtight container in the refrigerator for up to 5 days.
  • Bring brownies to room temperature or warm slightly before serving for the best flavor and texture.
