Ingredients

Scale

Dough

  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 cups rolled oats
  • 1 cup white chocolate chips

Filling

  • 1 can Lucky Leaf Regular (Premium, or Organic) Cherry Fruit Filling or Topping (about 21 ounces)
  • 1/2 cup Musselman’s Apple Butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and position the rack to the center to ensure even baking.
  2. Cream Butter and Sugars: In a large mixing bowl, using a mixer on medium speed, cream together the unsalted butter, granulated sugar, and light brown sugar for about 2 minutes until fluffy. Scrape the sides of the bowl as needed to combine thoroughly.
  3. Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until evenly blended.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined to avoid overworking the dough.
  5. Mix in Oats and Chips: Fold in the rolled oats and white chocolate chips gently, ensuring they are evenly distributed throughout the batter.
  6. Prepare Base Layer: Press about two-thirds of the batter into a thin, even layer in a greased jelly roll pan (typically 15×10 inches). Set this aside for the filling step.
  7. Mix and Spread Filling: In a separate bowl, stir together the cherry pie filling and apple butter until well combined. Spread this mixture evenly over the base layer in the pan.
  8. Add Remaining Batter: Scoop the remaining batter in dollops over the cherry-apple filling and gently spread it out to cover as much of the filling as possible.
  9. Bake: Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted near the center comes out clean or with just a few moist crumbs.
  10. Cool and Serve: Allow the bars to cool completely in the pan before cutting into squares. Serve warm with ice cream for an extra indulgent treat if desired.

Notes

  • For best results, use fresh, room temperature butter and eggs to ensure a smooth batter.
  • You can swap white chocolate chips with regular chocolate chips or chopped nuts to vary the flavor and texture.
  • Ensure the bars cool completely before slicing to achieve clean cuts; warm bars can be sticky and difficult to cut.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These bars can also be frozen for up to 2 months; thaw at room temperature before serving.
