This Chicken Broccoli Rice Casserole is a comforting and flavorful dish that brings together tender chicken, fresh broccoli, fluffy rice, and a creamy cheese sauce topped with a buttery cracker crust. Perfect for a family dinner or potluck.

For the Casserole:

  • 2 Tablespoons butter
  • 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 1 teaspoon Italian Seasoning
  • Salt/Pepper (to taste)
  • 2 1/2 cups chicken broth
  • 1 Tablespoon olive oil
  • 1 1/4 cups white long grain rice (uncooked)
  • 23 cups fresh broccoli florets (uncooked)
  • 10.5 oz. Condensed Cream of Chicken Soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (separated)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder

For the Topping:

  • 1 cup Ritz crackers (crushed)
  • 2 Tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F. Cut chicken into bite-sized pieces and season. Cook in butter until golden brown. Remove and set aside.
  2. Add broth, oil, and rice to pot, bring to boil, then simmer.
  3. Cook for 6 minutes, then add broccoli and cook for 9 more minutes.
  4. Let rice stand for 10 minutes off heat, then add chicken, soup, milk, sour cream, seasonings, and half of cheese.
  5. Transfer to casserole dish, top with remaining cheese, cover, and bake for 15 minutes.
  6. For the topping, combine melted butter and crushed crackers. Sprinkle over casserole and bake uncovered for 10 more minutes.
  7. Let stand for 5 minutes before serving.

Notes

  • This casserole can be customized with your favorite vegetables or different cheese varieties.
  • Feel free to add cooked bacon or ham for extra flavor.
