This Chicken Cheesesteak Skillet recipe is a quick and flavorful one-pan meal that combines tender chicken, sautéed peppers and onions, and gooey melted provolone cheese for a delicious twist on a classic Philly cheesesteak.

For the Chicken:

  • 2 tablespoons olive oil, divided
  • 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Kosher salt and fresh ground black pepper to taste

For the Vegetables:

  • 1 yellow onion, halved and thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup shredded provolone cheese

Instructions

  1. Sauté Vegetables: Heat a tablespoon of olive oil in a large skillet over medium-high heat. Sauté the peppers, onion, salt, and pepper until tender. Remove from skillet.
  2. Cook Chicken: Add remaining olive oil to skillet. Cook chicken with Italian seasoning, smoked paprika, salt, and pepper until browned and cooked through.
  3. Combine Ingredients: Return vegetables to skillet with cooked chicken. Top with shredded provolone cheese.
  4. Melt Cheese: Cover skillet until cheese melts. Serve hot.
