Chicken Fajita Flatbreads Recipe

For the Peppers and Onions
- 1 Tbsp olive oil
- 1 red bell pepper (sliced into ½” strips)
- 1 green bell pepper (sliced into ½” strips)
- 1 large white onion (sliced into ½” strips)
- 2 Tbsp water
- 2 tsp soy sauce
- 1 tsp lime juice
- ¼ tsp liquid smoke
- ¼ tsp cayenne pepper
- ¼ tsp onion powder
- ¼ tsp kosher salt
- ¼ tsp black pepper
For the Flatbreads
- 4 naan-style flatbreads
- 1 22-oz. bag Tyson® Grilled & Ready® Fully Cooked Grilled Chicken Breast Strips
- 1 cup shredded pepperjack or Monterey Jack cheese
- optional toppings: salsa, sour cream, chopped cilantro and/or guacamole
- For the Peppers and Onions – Using a large skillet or frying pan, add olive oil and place over medium-high heat. Once hot, add sliced bell peppers. Sauté for 6-7 minutes, stirring occasionally. Add sliced onions, stir and continue sautéing for 10-15 minutes, or until onions and peppers are tender.
- Meanwhile, using a small bowl, combine water, soy sauce, lime juice, liquid smoke, cayenne pepper, onion powder, salt and pepper.
- Once peppers and onions are tender, reduce heat to low and add liquid mixture; stir until well combined. Simmer for 1-2 minutes, or until liquid has mostly evaporated. Remove skillet from heat and set aside.
- For the Flatbreads – Preheat oven to 350°F. Place flatbreads on a baking sheet and heat in oven for 4-6 minutes, or until hot.
- Meanwhile, using a large nonstick skillet, heat frozen chicken strips over medium heat for 3-5 minutes, or until warm.
- Remove flatbreads from oven and divide cheese evenly on top. Next, divide cooked onions and peppers on top of cheese. Finally, top flatbreads with chicken strips. Serve immediately.
- {Optional} Serve with salsa, sour cream, chopped cilantro and/or guacamole.
