Instructions

  1. Prepare the fries: If cooking fresh fries, peel and slice potatoes into thin, even slices and then cut into skinny fries. Soak these fries in cold ice water for a few minutes to remove excess starch. After soaking, pat dry with a towel, and toss with oil, salt, and paprika.
  2. Cook the fries: Preheat the air fryer to 200°C (400°F). Spread fries in a single layer in the basket and cook for 20-25 minutes until crispy and golden.
  3. Mix the chicken: In a large bowl, combine chicken mince with thyme, cumin, marjoram, garlic salt, lemon juice, salt, and pepper. Mix well until spices are evenly distributed.
  4. Add coriander: Fold chopped fresh coriander into the chicken mixture for additional flavor.
  5. Assemble the tortillas: Lay out mini tortillas and spoon about 1 tablespoon of chicken mixture onto each. Press down firmly to spread the mixture evenly on the tortilla surface.
  6. Cook the chicken on tortillas: Heat a large pan over medium-high heat and add cooking oil. Place one or two tortillas chicken-side down depending on pan size. Cook about 3 minutes until golden and crispy, then lower heat to medium-low and cook another 2 minutes.
  7. Flip and finish cooking: Flip tortillas and cook for an additional minute to ensure chicken is fully cooked. Add more oil if necessary for subsequent tortillas.
  8. Add toppings: Remove cooked tortillas from the pan, spread a generous layer of tzatziki on top, add fries or crispy potato slices, followed by chopped cucumber, cherry tomatoes, diced red onion, and garnish with fresh coriander. Drizzle additional tzatziki if desired.
