Instructions

  1. Season the Chicken: Season the chicken breast cutlets with salt and pepper evenly on both sides. Set aside while you prepare other ingredients.
  2. Sauté Vegetables: Heat 1 tablespoon unsalted butter in a large non-stick skillet over medium heat. Add sliced red, orange, and yellow bell peppers, red onion, minced garlic, dried oregano, dried thyme, and crushed red pepper flakes if using. Sauté until the vegetables soften and begin to caramelize slightly. Remove vegetables from the skillet and set aside.
  3. Cook the Chicken: In the same skillet, melt the remaining 1 tablespoon butter. Add the seasoned chicken cutlets and cook for 3-4 minutes per side or until fully cooked through and no longer pink in the center. Remove chicken and set aside.
  4. Make the Sauce: Deglaze the skillet by pouring in the chicken broth, white wine, freshly squeezed lemon juice, and lemon zest. Bring the liquid to a simmer over medium heat, scraping up any browned bits for extra flavor.
  5. Simmer Chicken in Sauce: Return the cooked chicken to the skillet and allow it to simmer in the sauce for 5-8 minutes so the flavors meld together and the sauce slightly reduces.
  6. Combine Everything: Stir the sautéed vegetables and grated Parmesan cheese into the skillet, mixing well to coat everything in the flavorful sauce.
  7. Garnish and Serve: Sprinkle the chopped fresh parsley over the dish. Serve the chicken scampi over cooked linguine or angel hair pasta, making sure to spoon some of the sauce over each serving. Enjoy your meal!
