Ingredients

Scale

Pasta and Chicken

  • 16 ounces thin spaghetti, cooked (or any favorite noodles)
  • 2 cups cooked chicken (about 1 pound)

Sauce and Seasoning

  • ½ cup unsalted butter, plus more for buttering pan
  • 2 cans cream of chicken soup
  • 2 cups sour cream
  • ½ cup dry white wine
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Cheese Topping

  • 2 tablespoons Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Prepare the sauce mixture: In a large mixing bowl, combine ½ cup unsalted butter, cooked chicken, two cans of cream of chicken soup, 2 cups of sour cream, 1 teaspoon kosher salt, ½ teaspoon ground black pepper, and ½ cup dry white wine. Mix thoroughly until well combined.
  2. Add noodles: Fold in the cooked and drained spaghetti noodles into the sauce mixture until the noodles are evenly coated.
  3. Prepare baking dish: Butter a 13×9-inch baking dish generously to prevent sticking.
  4. Assemble casserole: Pour the chicken and noodle mixture into the prepared baking dish and spread evenly. Sprinkle 2 tablespoons Parmesan cheese and 2 cups shredded mozzarella cheese evenly over the top.
  5. Bake covered: Cover the dish tightly with aluminum foil and bake in a preheated 300 °F oven for 45 minutes to heat through and meld flavors.
  6. Bake uncovered: Remove the foil and continue baking uncovered for an additional 15 minutes to brown and melt the cheese topping.
  7. Serve and enjoy: Let the casserole cool for a few minutes before serving. This dish may also be prepared in advance and refrigerated before baking; if so, add extra time to bake thoroughly.

Notes

  • For best results, use freshly cooked spaghetti and avoid overcooking the noodles to maintain a nice texture.
  • If making ahead, assemble the casserole and cover tightly before refrigerating. Allow extra baking time when cooking from cold.
  • Substitute white wine with chicken broth for a non-alcoholic version.
  • Adjust seasoning according to taste; add more salt or pepper if desired.
  • Feel free to add sautéed mushrooms or peas for extra flavor and texture.
