  • 1 diced jalapeño
  • ¼ cup red onion, diced
  • Juice from 1 lime
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Prepare the marinade: Place the chipotle peppers, avocado oil, garlic, smoked paprika, cumin, oregano, honey, additional chipotle peppers, lime juice, and smoked paprika into a blender. Blend until smooth to create the marinade.
  2. Marinate the chicken: Place the cubed chicken thighs into a bowl or ziplock bag and pour the marinade over them. Mix thoroughly to coat the chicken evenly. Let it marinate for a minimum of 2 hours or preferably overnight for maximum flavor.
  3. Make the guacamole: While the chicken marinates, combine the avocados, chopped cilantro, diced jalapeño, red onion, lime juice, garlic powder, salt, and black pepper in a bowl. Mix well until combined. Refrigerate until ready to serve.
  4. Cook the chicken: Preheat a griddle to high heat. Add the marinated chicken pieces, cooking and flipping every 2-3 minutes to ensure even cooking. Remove the chicken from heat once it reaches an internal temperature of 165°F (75°C).
  5. Prepare the chipotle honey sauce: Using a blender, blend the chipotle peppers, honey, smoked paprika, lime juice, and any reserved marinade ingredients again until smooth.
  6. Toss the chicken in sauce: Cut the cooked chicken into bite-sized pieces. Place them in a bowl and pour the chipotle honey sauce over the top. Toss the chicken well to coat evenly.
  7. Warm the queso: In a saucepan, gently heat your favorite queso until it reaches a creamy, liquid consistency. Remove from heat to avoid separation.
  8. Assemble the tacos: On each yellow corn tortilla, spread a layer of guacamole on the bottom. Add a portion of the chipotle honey chicken, then top with a generous drizzle of warm queso. Serve immediately and enjoy!
