These Corned Beef Sliders are a delicious twist on the classic Reuben sandwich, combining layers of tender corned beef, tangy sauerkraut, melty Swiss cheese, and a homemade Russian dressing on soft slider buns. Baked to perfection with a buttery, garlicky topping sprinkled with poppy seeds and Parmesan, these sliders make for a perfect party appetizer or a comforting meal.

Ingredients

Scale

Russian Dressing

  • ⅓ cup mayonnaise
  • 1 ½ tablespoons ketchup
  • 1 ½ teaspoons horseradish
  • ½ teaspoon Worcestershire sauce
  • Salt and pepper, to taste

Sliders

  • 1 package slider buns (12 count)
  • ½ pound sliced corned beef, freshly cut deli version preferred
  • 1 cup sauerkraut, drained
  • 12 slices Swiss cheese (about 8 ounces)

Butter Topping

  • ¼ cup (½ stick) butter, melted
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • 1 tablespoon parmesan cheese
  • 2 teaspoons poppy seeds
  • Parmesan cheese, to sprinkle over sandwiches, if desired

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF to prepare for baking the sliders.
  2. Make Russian Dressing: In a bowl, whisk together mayonnaise, ketchup, horseradish, Worcestershire sauce, and salt and pepper to taste until smooth. Set aside for later use.
  3. Prepare Buns: Cut the slider buns in half horizontally. Place the bottom halves into an oven-safe dish, keeping them together in a single layer.
  4. Assemble Sliders: Spread the prepared Russian dressing evenly over the bottom buns. Layer half of the corned beef slices, then half of the Swiss cheese, followed by the drained sauerkraut, the remaining corned beef, and finally the remaining cheese slices. Top with the upper halves of the buns.
  5. Prepare Butter Topping: In a small bowl, mix together the melted butter, Dijon mustard, garlic powder, parmesan cheese, and poppy seeds until combined. Drizzle this mixture evenly over the top of the assembled sliders. Optionally, sprinkle extra Parmesan cheese on top.
  6. Bake Covered: Cover the dish with aluminum foil and bake the sliders in the preheated oven for 30 minutes, or until the cheese is fully melted and the sandwiches are heated through.
  7. Broil (Optional): Remove the foil and broil the sliders for about 1 minute to brown the tops and add a slight crisp, watching carefully to prevent burning.
  8. Serve: Remove the sliders from the oven, cut into individual portions, and serve warm for the best taste experience.

Notes

  • Use freshly sliced corned beef from the deli for the best texture and flavor.
  • Drain sauerkraut well to avoid soggy sliders.
  • If you prefer a spicier dressing, increase the horseradish to 2 teaspoons.
  • The topping can be made a day ahead and stored in the refrigerator.
  • Covering the sliders while baking helps to retain moisture and melt the cheese effectively.
  • Broiling is optional but adds a nice golden finish to the sandwiches.
  • Serve with pickles or a side salad for a complete meal.
