Cottage Cheese Muffins:

  • 1 cup cottage cheese (226 grams – I used low-fat)
  • 1 1/4 cup rolled oats (125 grams)
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup + 2 tablespoons mini chocolate chips (about 90 grams)

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees Fahrenheit. Line a muffin tin with silicone muffin cup liners. Grease a nonstick muffin tin if silicone liners are not available.
  2. Blend the ingredients: In a blender, combine cottage cheese, rolled oats, eggs, maple syrup, vanilla extract, baking powder, cinnamon, nutmeg, and salt. Blend until smooth, about 30 seconds. Do not over-blend.
  3. Stir in chocolate chips: Add most of the chocolate chips to the batter and stir to combine. Let the batter rest for 5 minutes to thicken.
  4. Bake the muffins: Fill 9 muffin tins with the batter using a cookie scoop or about 2 1/2 tablespoons each. Sprinkle with the remaining chocolate chips. Bake for 22-25 minutes until golden brown. Allow to cool for a few minutes before serving.
