For the Chicken:

  • 4 Large Chicken Thighs (bite size pieces, skinless & boneless)
  • Sea salt
  • Black pepper

For the Bechamel Sauce:

  • 2½ tbsp Butter
  • 2 tbsp Flour
  • 1 cup Milk
  • Sea salt
  • Black pepper

For the Quesadillas:

  • 8 Tortillas
  • 1½ cup Cheddar Cheese (shredded)
  • 1½ cup Mozzarella Cheese (shredded)

Instructions

  1. Cook the Chicken: Melt ½ tbsp butter in a pan over medium heat. Add chicken thighs, cook for 3-5 minutes, season with salt and black pepper. Set aside.
  2. Prepare the Bechamel Sauce: In the same pan, melt remaining butter, add flour, then gradually add milk while stirring until smooth. Add cooked chicken, season, and set aside.
  3. Assemble the Quesadillas: Toast a tortilla, sprinkle with cheeses, add chicken mixture, more cheese, and top with another tortilla. Cook until golden brown, flip, and cook for another 3 minutes. Repeat for remaining quesadillas.
  4. Serve: Cut quesadillas into four parts and enjoy!

  • You can customize these quesadillas with additional ingredients like jalapenos, onions, or bell peppers.
