For the Chicken:
- 4 Large Chicken Thighs (bite size pieces, skinless & boneless)
- Sea salt
- Black pepper
For the Bechamel Sauce:
- 2½ tbsp Butter
- 2 tbsp Flour
- 1 cup Milk
- Sea salt
- Black pepper
For the Quesadillas:
- 8 Tortillas
- 1½ cup Cheddar Cheese (shredded)
- 1½ cup Mozzarella Cheese (shredded)
- Cook the Chicken: Melt ½ tbsp butter in a pan over medium heat. Add chicken thighs, cook for 3-5 minutes, season with salt and black pepper. Set aside.
- Prepare the Bechamel Sauce: In the same pan, melt remaining butter, add flour, then gradually add milk while stirring until smooth. Add cooked chicken, season, and set aside.
- Assemble the Quesadillas: Toast a tortilla, sprinkle with cheeses, add chicken mixture, more cheese, and top with another tortilla. Cook until golden brown, flip, and cook for another 3 minutes. Repeat for remaining quesadillas.
- Serve: Cut quesadillas into four parts and enjoy!
