Noodles:

  • 1 pound cavatappi shells

Cheese Sauce:

  • 1¼ cups heavy whipping cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Mozzarella cheese

Instructions

  1. Cook Noodles: In a large pot, cook noodles in boiling water until al dente, per packaged directions. Drain and set aside.
  2. Make Cheese Sauce: In a medium pot, melt butter. Whisk in flour, salt, and pepper to form a roux. Slowly add milk and heavy cream, whisking until combined. Heat until bubbling and slightly thickened.
  3. Add Cheese: Reduce heat, add cheddar and Mozzarella cheeses. Stir until melted and smooth. Add pasta and toss to combine. Adjust consistency with more milk if needed.
  4. Thicken: Let mac and cheese sit for 5 minutes to thicken before serving.
