These Crispy Beef Tacos are baked to perfection, not fried, for a healthier twist on a classic favorite. Packed with seasoned ground beef, cheese, and a flavorful chipotle crema, these tacos are easy to make and incredibly delicious.

  • Oil (canola, vegetable, or olive)
  • 1 lb. ground beef (85% lean/15% fat or 90/10)
  • 2 Tbsp. taco seasoning
  • 1/2 cup water
  • 3 cloves garlic, minced
  • 1 lime, juiced
  • 1, 4 oz. can diced green chiles
  • Salt and pepper, to taste
  • 1 cup colby jack cheese, shredded

For Assembly:

  • 810, 6-inch white or yellow corn tortillas
  • 1/23/4 cup Mexican crema or sour cream
  • 2 chipotle peppers in adobo sauce
  • 1 tsp. honey or sugar
  • 1/2 lime, juiced
  • 1 clove garlic
  • Salt to taste

Optional Toppings:

  • Sour cream
  • Shredded lettuce
  • Finely chopped fresh cilantro
  • Pico de gallo
  • Guacamole
  • Pickled red onions

Instructions

  1. Preheat the oven to 425°F and prepare baking sheets.
  2. Cook the beef: Brown ground beef in a skillet, then add seasoning, water, garlic, lime juice, green chiles, salt, and pepper.
  3. Add cheese: Stir in 1 cup of shredded cheese until combined.
  4. Prepare tortillas: Heat tortillas in the microwave to make them pliable.
  5. Fill and fold: Spread beef mixture on tortillas, add cheese, fold, and brush with oil.
  6. Bake: Bake filled tortillas for 15-20 minutes until crispy.
  7. Make chipotle crema: Blend chipotle peppers, honey, lime juice, garlic, and salt.
  8. Serve: Top tacos with crema and favorite toppings.
