- 3 Medium Russet Potatoes (peeled and diced into large pieces)
- 4 Medium Carrots (peeled and cut into ½ inch thick slices)
- 1 Medium Onion (diced)
- 1 can Diced Tomatoes (14 oz can)
- 2 cups Beef Broth
Seasonings
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 teaspoons Italian Seasoning
- 1 teaspoon Onion Powder
- 2 teaspoons Minced Garlic
- Prepare Ingredients: Brown the ground beef in a skillet over medium heat until fully cooked, then drain excess fat. Peel and dice the potatoes into large chunks, peel and slice the carrots into half inch thick pieces, and dice the onion finely.
- Add to Crock Pot: Place the browned ground beef, diced potatoes, sliced carrots, and diced onions into the crock pot, distributing them evenly.
- Mix Seasonings: In a medium bowl, combine the can of diced tomatoes, beef broth, salt, pepper, Italian seasoning, onion powder, and minced garlic. Stir well to mix all seasonings thoroughly.
- Cook Stew: Pour the tomato and broth mixture over the ingredients in the crock pot. Cover with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes and carrots are tender and flavors are well blended.
- Serve: Once cooked, stir the stew gently to combine and serve warm. Enjoy this comforting and easy meal perfect for chilly days or a filling family dinner.
Notes
- You can substitute ground turkey or chicken for a leaner option.
- For extra flavor, add a bay leaf during cooking but remove before serving.
- If you prefer a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the stew in the last 30 minutes of cooking.
- Feel free to add other vegetables like peas or green beans for variation.
- Leftovers store well in the refrigerator for up to 3 days or can be frozen for up to 2 months.
