Bone-In Beef Short Ribs:

Baby Carrots:

  • 3 cups Baby Carrots

Mushrooms:

  • 2 cups Mushrooms (Sliced)

Beef Broth:

  • 2 cups Beef Broth

Red Wine (Optional- See Notes):

  • 1 cup Red Wine (Optional)

Tomato Paste:

  • 2 tbsp Tomato Paste

Unsalted Butter:

  • 3 tbsp Unsalted Butter

Herbs and Seasonings:

  • 1 Bay Leaf
  • 8 Sprigs Fresh Thyme
  • 1 tbsp Garlic (Minced)
  • Salt (To Taste)
  • Pepper (To Taste)

Instructions

  1. Prepare the Short Ribs: Season all sides of the short ribs with salt and pepper. Brown each piece in a skillet over medium heat for about 20 seconds per side.
  2. Crockpot Assembly: Place the browned short ribs, carrots, mushrooms, beef broth, red wine (if using), tomato paste, butter, bay leaf, thyme, garlic, salt, and pepper in a large crockpot. Cook on low for 8 hours or until the meat is tender and falling off the bone.
  3. Final Steps: Once cooked, remove the short ribs and vegetables from the crockpot, discarding the herbs. Serve the ribs and vegetables with mashed sweet potatoes and drizzle with the flavorful cooking liquid.
