Ingredients

Scale

Beef and Seasoning

  • 2 lbs beef stew meat or beef tips
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup all-purpose flour
  • 3 cloves garlic, minced
  • 1 medium onion, diced

Broth and Sauces

  • 3 cups beef broth
  • 1 packet (1 oz) onion soup mix
  • 2 tbsp Worcestershire sauce

Noodles and Garnish

  • 12 oz egg noodles
  • Fresh parsley, chopped (optional)

Instructions

  1. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Season the beef tips with salt and pepper, then add to the skillet. Brown the beef on all sides, about 5–7 minutes. Once browned, transfer the beef to the Crockpot.
  2. Sauté Aromatics: In the same skillet, add diced onion and minced garlic. Sauté until fragrant and onions are softened, roughly 3–4 minutes. Transfer the sautéed onion and garlic to the Crockpot with the beef.
  3. Prepare the Cooking Liquid: In a medium bowl, whisk together beef broth, onion soup mix, Worcestershire sauce, and flour until smooth. Pour this mixture over the beef and onions in the Crockpot, ensuring everything is evenly coated.
  4. Slow Cook: Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beef is tender and the sauce has thickened.
  5. Cook Noodles: About 30 minutes before serving, bring a pot of salted water to a boil and cook egg noodles according to package instructions, usually 7–9 minutes until al dente. Drain well.
  6. Serve: Spoon the beef tips and rich gravy over the cooked egg noodles. Garnish with freshly chopped parsley if desired for a fresh touch.

Notes

  • For a thicker gravy, you can mix an additional tablespoon of flour or cornstarch with cold water and stir into the Crockpot 15 minutes before serving.
  • Beef stew meat can be substituted with sirloin tips or chuck roast cut into cubes.
  • Leftovers reheat well and can be frozen for up to 3 months.
  • For extra flavor, add a splash of red wine to the cooking liquid before slow cooking.
  • Use gluten-free flour to make this recipe gluten-free.
