Delicious and creamy Crockpot Cajun Butter Chicken that is tender, flavorful, and easy to prepare. This slow-cooked dish combines aromatic Cajun spices with butter, garlic, and cream for a comforting meal perfect for busy weeknights.

Ingredients

Scale

Chicken

  • 4 pieces boneless, skinless chicken breasts (about 1.5 pounds total)

Seasoning & Spices

  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Other Ingredients

  • ½ cup unsalted butter (1 stick)
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream
  • Fresh parsley, chopped (to taste, for garnish)

Instructions

  1. Season the chicken: Season the chicken breasts evenly with salt, black pepper, and Cajun seasoning. This will give the chicken a robust and spicy flavor base.
  2. Sauté onion and garlic: In a skillet over medium heat, melt the unsalted butter. Add the chopped onion and cook until softened and translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant to enhance the depth of flavor.
  3. Add to crockpot: Pour the sautéed onion and garlic mixture over the seasoned chicken in the crockpot. Sprinkle the smoked paprika and dried oregano over the top, then add the chicken broth to provide moisture and help tenderize the chicken.
  4. Cook slowly: Cover the crockpot and cook on low heat for 6 hours. This slow cooking method makes the chicken extremely tender and infused with all the spices.
  5. Shred chicken and add cream: After 6 hours, use two forks to shred the chicken directly in the crockpot. Stir in the heavy cream and cook for an additional 15-20 minutes on low to allow the cream to thicken and blend with the flavors.
  6. Serve and garnish: Serve the creamy Cajun butter chicken over rice or pasta. Garnish with freshly chopped parsley for a bright, fresh finish.

Notes

  • You can adjust the amount of Cajun seasoning to make the dish more or less spicy according to your preference.
  • If you prefer a thicker sauce, you can remove the lid and cook on high for 10-15 minutes after adding the heavy cream to reduce it.
  • This recipe pairs wonderfully with steamed rice, pasta, or even crusty bread to soak up the flavorful sauce.
  • Leftovers keep well in the refrigerator for up to 3 days and can be reheated gently on the stovetop or microwave.
  • For a lighter version, substitute heavy cream with half-and-half or coconut cream for a dairy-free option.
