Chicken:

  • 4 boneless, skinless chicken breasts

Sauce:

  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp cornstarch
  • 1 tbsp garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional for heat)

Additional:

  • ½ cup sun-dried tomatoes, chopped
  • 2 tbsp butter
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides and set aside.
  2. Create the Sauce: In a bowl, whisk together the chicken broth and 1 tablespoon of cornstarch until smooth. Then add the heavy cream, Parmesan cheese, garlic, oregano, thyme, and red pepper flakes (if using), and whisk until well combined.
  3. Assemble the Crockpot: Place the seasoned chicken breasts in the bottom of the crockpot. Pour the sauce mixture over the chicken, making sure the breasts are fully coated.
  4. Add Sun-Dried Tomatoes: Sprinkle the chopped sun-dried tomatoes over the top of the chicken and sauce.
  5. Cook: Set the crockpot to low and cook for 4 hours, or high for 2 hours, until the chicken is fully cooked and tender.
  6. Finish with Butter: In the last 30 minutes of cooking, add the butter to the crockpot, stirring it into the sauce as it melts.
