Steak Bites
- 3 pounds sirloin steak, cut into bite-sized pieces
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons vegetable oil, divided
Slow Cooker Ingredients
- 1 small sweet onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup unsalted beef stock
- 1 (1 ounce) packet au jus gravy mix
- 4 tablespoons unsalted butter, thinly sliced
- Fresh chopped parsley for garnish (optional)
- Season the Steak: Place the cubed sirloin steak into a large bowl, then add kosher salt and black pepper. Toss the steak pieces thoroughly to ensure even seasoning on all sides.
- Sear the Steak: Heat a large skillet over medium-high heat and add half of the vegetable oil. Working in batches to avoid overcrowding, sear the steak bites until browned on all sides, about 2-3 minutes per batch. Transfer each batch of seared steak into the slow cooker. Add more oil to the skillet as needed for subsequent batches.
- Add Onion and Garlic: Once all steak pieces are seared and in the slow cooker, add the thinly sliced sweet onion and garlic. Toss gently with the steak bites to combine flavors.
- Add Liquids and Seasoning: Pour one cup of unsalted beef stock into the slow cooker. Sprinkle the au jus gravy mix evenly over the ingredients. Top with thin slices of unsalted butter, distributing them across the surface.
- Slow Cook the Steak Bites: Cover the slow cooker and cook on high for 3 to 4 hours or on low for 6 to 8 hours. If possible, stir the mixture every 30 minutes to ensure even cooking and flavor distribution.
- Serve: Once cooked, serve the steak bites warm. Garnish with fresh chopped parsley for a burst of color and freshness, if desired.
Notes
- For best results, use sirloin or another tender cut of steak to ensure tender and juicy bites.
- Do not skip searing the steak as it adds depth of flavor through caramelization.
- If you prefer thicker gravy, you can remove the lid during the last 30 minutes of cooking to reduce the sauce.
- Serve with mashed potatoes, rice, or crusty bread to make it a complete meal.
- Leftovers keep well in the fridge for up to 3 days and can be reheated gently on the stovetop or microwave.
