- Hard Boiling Eggs: You can either use the Instant Pot or stove top method to hard boil the eggs. For the Instant Pot, place eggs on a trivet with 1 cup of water, pressure cook for 6 minutes, natural release 6 minutes, then quick release and ice bath for 6 minutes before peeling. For stove top, cover eggs in cold water, bring to boil, cover and turn off heat, let sit 10-12 minutes, then ice bath for 5 minutes before peeling.
- Prepare the Creamy Base: In a large mixing bowl, combine the softened cream cheese and mayonnaise. Use an electric mixer to blend until smooth and creamy.
- Season the Dip: Add salt, ground black pepper, ground mustard, and sweet relish to the creamy mixture. Mix thoroughly to evenly distribute the flavors.
- Add the Eggs: Chop the peeled hard boiled eggs into small pieces and gently fold them into the creamy mixture, keeping some texture in the dip.
- Finish with Herbs and Garnish: Stir in the chopped chives or green onions if using. Sprinkle the top of the dip with paprika for color and a hint of smoky flavor.
- Serve or Store: Serve the dip immediately with crackers, bread, or fresh vegetables, or cover and refrigerate until ready to serve. The flavors meld nicely when chilled.
