Ingredients

Scale

Steak Bites

  • 1 tbsp avocado oil (or high-smoke point oil)
  • 3 lbs sirloin steak, trimmed and cut into 1-inch bite-sized pieces
  • 1 tsp kosher salt
  • 1 tsp freshly ground black pepper

Garlic Butter Sauce & Garnish

  • 6 tbsp unsalted butter
  • 1 tbsp fresh garlic, minced (about 34 cloves)
  • 1 tbsp fresh parsley, chopped, for garnish

Instructions

  1. Preheat the Blackstone Grill: Preheat your Blackstone grill to high heat at around 450°F. Drizzle the avocado oil evenly over the hot griddle surface and spread it with a spatula to ensure the cooking surface is well-coated.
  2. Season and Arrange Steak: Place the bite-sized sirloin steak pieces on the hot griddle in a single layer without overcrowding. Generously season them with kosher salt and freshly ground black pepper to enhance the beef’s natural flavors.
  3. Sear the Steak: Allow the steak bites to cook undisturbed for 2 minutes to develop a beautiful brown crust on one side, which locks in the juices and flavor.
  4. Flip and Continue Cooking: Toss and flip the steak pieces gently and continue cooking for an additional 2-3 minutes, occasionally tossing, until the steak is evenly browned on all sides and reaches your preferred doneness—135°F for medium-rare or 140°F for medium.
  5. Add Garlic Butter: Reduce the grill heat to medium. Add the unsalted butter and minced garlic directly onto the steak bites on the griddle. Stir constantly for 30 to 60 seconds, letting the butter melt and garlic become fragrant, coating all the pieces evenly with rich flavor.
  6. Serve: Immediately remove the garlic butter steak bites from the grill to prevent overcooking. Transfer them to a serving platter, sprinkle with fresh chopped parsley, and serve warm for a delicious, tender, and flavorful meal.

Notes

  • Use a high-smoke point oil like avocado oil to prevent burning at high grill temperatures.
  • Do not overcrowd the griddle to ensure even searing and caramelization of the steak.
  • Adjust the cooking time to match your desired steak doneness and thickness of the steak pieces.
  • For a stronger garlic flavor, increase the amount of minced garlic slightly.
  • Fresh parsley garnish adds a bright color and fresh herbaceous note.
