  • 1 1/4 cup quick cooking oats
  • 1 cup unsweetened shredded coconut
  • 2 tbsp ground flax seeds
  • 2 tbsp hemp seeds

Wet Ingredients

  • 1/2 cup nut butter (almond, cashew, or sunbutter; sunbutter used)
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Mix Ingredients: In a medium bowl, combine the oats, shredded coconut, ground flax seeds, hemp seeds, nut butter, maple syrup, and vanilla extract. Stir thoroughly until all the ingredients are well incorporated into a consistent mixture.
  2. Chill the Mixture: Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let it chill for at least 30 minutes to allow the mixture to firm up, which makes rolling easier.
  3. Form Energy Balls: Once chilled, take the mixture out and roll it into balls about 1 inch in diameter, or your preferred size. Use your hands to press and shape them gently but firmly.
  4. Store Properly: Place the formed energy balls in an airtight container. Store them in the refrigerator where they will keep fresh for up to one week, perfect for snacking throughout the week.
