Ingredients

Cod Fillets:

4 cod fillets (5–6 oz each)

Marinade:

1/4 cup low-sodium soy sauce, 1 tbsp sesame oil, 2 tbsp honey or maple syrup, 1 tbsp rice vinegar, 1 1/2 tsp fresh grated ginger, 2 cloves garlic (minced)

Optional Glaze:

1 tsp cornstarch + 1 tbsp water (optional for thickened glaze)

Garnish:

Green onions and sesame seeds

Optional for Heat:

Red pepper flakes or sriracha

Instructions

  1. Make the marinade: In a small bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, garlic, and ginger.
  2. Marinate the fish: Place cod in a shallow dish or resealable bag. Pour the marinade over and let sit for 15–30 minutes.
  3. Cook the cod:
    • To bake: Preheat oven to 400°F. Place cod on a parchment-lined baking dish and bake for 12–15 minutes, or until the fish flakes easily.
    • To pan-sear: Heat a little oil in a skillet over medium heat. Cook cod 3–4 minutes per side, spooning extra marinade over top.
  4. Optional glaze: Pour leftover marinade into a small saucepan. Bring to a simmer, stir in cornstarch slurry, and simmer 1–2 minutes until thickened.
  5. Serve: Spoon sauce over fish and top with green onions and sesame seeds. Serve with rice, sweet potatoes, or steamed veggies.
