Instructions

  1. Blend the ingredients: Combine almond flour, xanthan gum, baking powder, salt, egg, and water in a food processor and blend until a dough-like ball forms, ensuring all ingredients are well incorporated.
  2. Knead and rest the dough: Remove the dough from the processor, cover it with plastic wrap, and knead with your hands for about a minute to develop elasticity. Set it aside to rest for 15 minutes to improve the tortillas’ bendability.
  3. Divide and roll dough: Unwrap the dough and divide it into four equal balls. Place each ball between two pieces of parchment paper, flatten with your hand, then use a rolling pin to roll it out to about 6 inches in diameter, testing with a 6-inch bowl to ensure correct size.
  4. Trim edges: Remove the top parchment paper, place the bowl over the dough without pressing down, and use a knife to trace the circle. Remove the excess dough and save the trimmings to form an additional tortilla.
  5. Cook tortillas: Preheat a non-stick skillet over medium-high heat. Place each tortilla in the skillet and cook for about 30 seconds until the dough changes from a yellowish hue to off-white. Flip and cook for an additional 5 seconds to prevent dryness and maintain pliability. Repeat for all tortillas, using dough scraps to make one more tortilla.
