  • 2 servings dry instant ramen noodle cakes (or other noodles of choice, around 140 g total)
  • 10 oz extra firm tofu, veggies, or mushrooms of choice, sliced

Sauce

  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional for color)
  • 23 tbsp cornstarch
  • 13 tbsp sugar or other liquid sweetener
  • 2 tbsp rice vinegar, white vinegar, or lemon juice
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced (optional)

Toppings

  • Chopped scallions
  • Sesame seeds

Instructions

  1. Mix the Sauce: Combine all the sauce ingredients, adjusting to taste. Set aside.
  2. Cook Noodles: Boil water and cook noodles until half done. Drain and set aside.
  3. Sauté Ingredients: In a pan, sauté tofu, veggies, or mushrooms until cooked.
  4. Simmer Sauce: Mix the sauce again and simmer in the pan until slightly thickened.
  5. Add Noodles: Add noodles to the pan and cook until coated and sauce thickens.
  6. Season: Adjust seasoning with soy sauce, sweetener, and pepper as needed.
  7. Garnish: Top with sesame seeds and scallions. Enjoy hot!
