These Easy Smash Burger Tacos are a delicious twist on classic tacos, featuring crispy, juicy beef patties smashed thin between flour tortillas and topped with a savory burger sauce, cheese, and classic burger toppings.

Ground Beef Patties:

  • 1 pound ground beef (80/20 fat percentage)
  • 1 teaspoon kosher salt
  • 10 cracks fresh black pepper

Burger Sauce:

  • 1/2 cup mayonnaise
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon mustard
  • 2 tablespoons minced bread & butter pickles
  • 1 tablespoon pickle brine
  • 10 cracks fresh black pepper
  • 1/4 teaspoon Worcestershire sauce

Additional Ingredients:

  • 6 (six-inch) flour tortillas
  • 6 slices muenster or provolone cheese
  • Shredded lettuce, chopped white onion, and dill pickle chips for topping

Instructions

  1. Burger Sauce: Add all burger sauce ingredients to a bowl and whisk to combine. Refrigerate until ready to use; can be made 3 days in advance.
  2. Prep Beef Patties: Mix salt and pepper into a bowl. Divide and roll ground beef into 2 1/2 ounce balls. Handle gently. Chill until ready.
  3. Preheat Flat Top: Heat flat top on high heat until very hot.
  4. Cook Patties: Place beef ball on hot flat top, top with tortilla, and smash thin. Cook 1 minute, flip, cook 2-3 minutes. Check for browning.
  5. Assemble Tacos: Flip burgers, top with cheese, cook 2 minutes. Serve on tortillas with sauce and toppings.
