Honeycomb Base

  • 1 ½ cups granulated sugar
  • ¼ cup light corn syrup (or golden syrup)
  • ¾ cup water
  • 1 tablespoon baking soda

Chocolate Coating

  • 8 oz dark or semisweet chocolate, melted

Black Sugar Coating

  • 1 cup caster sugar*
  • Black food coloring (several drops, as needed)

Instructions

  1. Prepare the Container: Line an ~8×10 or 9×9-inch heat-safe container with parchment paper and set it aside to cool the candy later.
  2. Make the Sugar Syrup: Combine granulated sugar, corn syrup, and water in a large pot over medium-low heat. Stir or whisk gently until the sugar is fully dissolved.
  3. Heat to Hard Crack Stage: Increase heat to medium and attach a candy thermometer to the pan’s side. Stop stirring completely. Heat the mixture until it reaches 300-310˚F (hard crack stage), approximately 305˚F.
  4. Add Baking Soda: Remove the pot from heat and immediately whisk in the baking soda quickly but thoroughly for no more than 10 seconds. The mixture will bubble up and foam.
  5. Pour and Cool: Carefully pour the foaming mixture into the prepared container. Let it cool completely for 1-2 hours until solid and easy to break.
  6. Break Into Pieces: Once fully cooled, break the hardened honeycomb into coal-sized pieces using a knife. Save smaller shards for other toppings or treats.
  7. Prepare Black Sugar: Place caster sugar and a few drops of black food coloring in a plastic bag. Seal and rub the coloring evenly into the sugar until completely black. Add more drops if necessary. Pour into a bowl and set aside.
  8. Melt the Chocolate: Microwave the chocolate in 30-second intervals, stirring well between each until fully melted and smooth.
  9. Coat Honeycomb: Dip each honeycomb piece into the melted chocolate, allowing excess chocolate to drip off. Place the coated pieces on a parchment-lined baking sheet.
  10. Coat With Black Sugar: When the chocolate is nearly set but still tacky, toss the pieces in the black sugar to coat thoroughly.
  11. Set and Serve: Allow the chocolate to set completely before enjoying or packaging the edible coal candy in decorative bags.
