Ingredients

Scale

Meat

  • pounds ground beef

Vegetables and Aromatics

  • 1 large onion, diced
  • 2 tablespoons minced garlic
  • ½ cup shredded carrots
  • 16 ounces coleslaw mix (shredded cabbage and carrots)

Oils and Sauces

  • 1 tablespoon vegetable oil
  • ½ to ¾ cup soy sauce
  • 2 tablespoons sesame oil

Seasonings

  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • 1½ teaspoons ground ginger

Instructions

  1. Cook Ground Beef: In a large, deep-sided skillet over medium heat, cook the ground beef until it is no longer pink, taking care not to break it into smaller pieces to maintain texture.
  2. Add Onions and Garlic: Drain the grease from the cooked beef, return the skillet to the stove, add the diced onions and minced garlic. Sauté until the onions are soft and translucent, releasing their natural sweetness.
  3. Incorporate Veggies: Pour in the sesame oil, then add the shredded carrots and coleslaw mix. Use tongs to combine everything thoroughly and cook for about 5 minutes until the vegetables are tender but still crisp.
  4. Season: In a separate small bowl, mix the onion powder, garlic powder, red pepper flakes, ground ginger, soy sauce, and vegetable oil. Pour this seasoning mixture over the meat and vegetable mixture in the skillet.
  5. Finish Cooking: Reduce the heat to low and cook the combined mixture for another 5 minutes, allowing the flavors to meld and the sauce to slightly thicken. Serve warm.

Notes

  • Adjust the amount of red pepper flakes according to your spice preference.
  • Use low-sodium soy sauce to reduce the sodium content.
  • Serve with steamed rice or cauliflower rice for a complete meal.
  • Feel free to substitute ground turkey or chicken for a leaner protein option.
  • Leftovers can be refrigerated for up to 4 days and reheated thoroughly before serving.
