Ingredients

Scale

Meat and Oils

  • 1 lb lean ground beef (85/15)
  • 1 Tbsp olive oil
  • 2 tsp sesame oil

Vegetables

  • ½ medium onion, finely diced
  • 1 medium carrot, julienned or coarsely grated
  • 3 cups green cabbage, thinly sliced
  • 3 garlic cloves, minced

Seasonings and Sauces

  • ½ tsp fine sea salt, or to taste
  • ¼ tsp black pepper, or to taste
  • 1 tsp ground ginger
  • ¼ cup low-sodium soy sauce
  • ½ tsp granulated sugar

Garnish (Optional)

  • 1 Tbsp chopped green onion
  • ¼ tsp sesame seeds

Instructions

  1. Cook the ground beef: Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook for about 5 minutes, breaking it apart with a spatula until browned and no longer pink. Season with salt and pepper to taste.
  2. Add vegetables: Stir in the diced onion and grated carrot. Cook for 5 to 7 minutes, stirring occasionally, until the onion becomes soft and translucent.
  3. Garlic addition: Add the minced garlic to the skillet and cook for another 30 seconds, stirring constantly to prevent burning and to release the garlic’s aroma.
  4. Cook cabbage mixture: Add the sliced cabbage, ground ginger, low-sodium soy sauce, sesame oil, and sugar. Sauté everything together for 5 to 7 minutes, or until the cabbage is tender and slightly wilted.
  5. Finish and serve: Remove the skillet from the heat. Garnish with chopped green onions and sesame seeds if desired. Serve warm either on its own or alongside rice or noodles for a complete meal.

Notes

  • You can substitute ground turkey or chicken for ground beef to reduce fat content.
  • For a vegetarian version, replace ground beef with crumbled firm tofu or tempeh and use vegetarian soy sauce.
  • Adjust the soy sauce quantity to reduce sodium content if desired.
  • Add a dash of chili flakes or sriracha for a spicy kick.
  • This dish reheats well and can be stored in the refrigerator for up to 3 days.
