Truffle Mixture
- 8 ounces white baking chocolate, chopped
- 4 ounces cream cheese, softened
- 1/4 cup confectioners’ sugar
- 1 teaspoon rum extract
- 1/2 teaspoon ground nutmeg
Coating
- 8 ounces white baking chocolate, chopped
- Additional ground nutmeg, for sprinkling
- Melt Chocolate: In a microwave-safe bowl, melt 8 ounces of the white baking chocolate by heating in short 20-30 second intervals, stirring well after each until smooth and fully melted.
- Prepare Truffle Base: In a large mixing bowl, beat together the softened cream cheese, confectioners’ sugar, rum extract, and ground nutmeg until the mixture is creamy and well blended.
- Combine Chocolate and Cream Cheese Mixture: Gradually beat in the melted white chocolate until the mixture is smooth and homogenous, ensuring all ingredients are fully incorporated.
- Chill Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 4 hours, or until firm enough to handle and shape into balls.
- Shape Truffles: Using a teaspoon or small cookie scoop, roll the chilled chocolate mixture into 1-inch balls. Place the balls on a baking sheet lined with waxed paper.
- Chill Again: Refrigerate the shaped truffles for about 1 hour to firm up before dipping.
- Melt Remaining Chocolate: Melt the remaining 8 ounces white baking chocolate in the microwave, stirring every 20-30 seconds until smooth.
- Dip and Coat: Using a fork or dipping tool, dip each truffle into the melted chocolate, allowing excess chocolate to drip off. Place dipped truffles back onto waxed paper-lined baking sheet.
- Sprinkle and Set: Lightly sprinkle each coated truffle with additional ground nutmeg for garnish. Refrigerate until the outer chocolate coating is set and firm.
- Store: Store the truffles in an airtight container with layers of waxed paper between them in the refrigerator to maintain freshness and prevent sticking.
Notes
- Use good quality white baking chocolate for a smoother texture and better flavor.
- Adjust the rum extract amount to your taste preference, or substitute with vanilla extract if desired.
- Ensure the cream cheese is softened to room temperature for easier mixing.
- Keep truffles refrigerated, as they contain cream cheese and can soften at room temperature.
- For a festive touch, consider rolling the truffles in finely chopped nuts or coconut before coating.
