Ingredients

Scale

Meatballs

  • 2 pounds ground chicken
  • 3/4 cup finely crumbled feta cheese
  • 1/4 cup finely chopped fresh dill
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 1 tablespoon olive oil

Yogurt Dill Sauce

  • 1 cup plain Greek yogurt
  • 1/2 teaspoon garlic powder
  • 3 tablespoons finely chopped fresh dill
  • Salt and pepper to taste
  • 24 tablespoons lemon juice (to taste)

For Serving

  • 1 1/2 cups dry orzo, cooked according to package instructions

Instructions

  1. Preheat the oven: Set your oven to 400˚F and line a sheet pan with parchment paper to prevent sticking and for easy cleanup.
  2. Make the meatball mixture: In a large bowl, combine ground chicken, crumbled feta, chopped dill, kosher salt, garlic powder, black pepper, panko breadcrumbs, and eggs. Mix thoroughly until all ingredients are evenly distributed.
  3. Shape the meatballs: Using a 2-tablespoon cookie scoop or spoon, portion the mixture and roll each into a smooth ball with your hands. Place the meatballs evenly spaced on the prepared baking sheet.
  4. Bake the meatballs: Bake the meatballs in the preheated oven for 20 to 25 minutes, or until they are lightly golden brown on the bottom and cooked through in the center.
  5. Cook the orzo and prepare sauce: While the meatballs bake, cook the orzo according to the package instructions. Simultaneously, whisk together the Greek yogurt, garlic powder, fresh dill, salt, pepper, and lemon juice in a bowl, tasting and adjusting seasoning as needed.
  6. Serve: Plate the warm meatballs alongside the cooked orzo and drizzle or serve with the yogurt dill sauce. Enjoy this delicious, Mediterranean-inspired meal!

Notes

  • Do not overmix the meatball ingredients to keep the meatballs tender.
  • Use fresh dill for the best flavor; dried dill will not provide the same brightness.
  • Adjust the lemon juice in the sauce to your taste for desired acidity.
  • You can substitute ground turkey for chicken if preferred.
  • Make sure meatballs are cooked to an internal temperature of 165°F for safety.
