Instructions

  1. Cook Beef Mixture: Combine the ground beef, diced onion, and minced garlic in a skillet over medium-high heat. Cook until the beef is no longer pink, breaking up the meat with a wooden spoon. Drain any excess fat, then return the skillet to the stovetop.
  2. Simmer with Enchilada Sauce: Add the homemade enchilada sauce to the beef mixture, stirring to combine. Let it simmer for about 10 minutes to meld the flavors and thicken the sauce slightly.
  3. Fry Tortillas: Heat another skillet over medium-high heat and add the vegetable oil. Once hot, fry the corn tortillas one at a time (or more if the pan size allows without overlapping) for about 1 minute on each side until they turn lightly golden brown. Remove and drain on a paper towel-lined plate to absorb excess oil.
